I was making cornbread for dinner. The kind that has creamed corn and sour cream and butter and eggs and cornbread mix. Talking to my sister who was busy making Brunswick stew, I pour the mixture into the prepared 8×8 pan and pop it into the preheated oven. My work is done. But as we chat and I casually clean up bowls and measuring cups I pick up the cornbread box to toss it into the garbage and realize it’s heavy. Heavy with the cornmeal mix still inside. Which means it’s not in the cornbread that’s in the oven. I quickly haul the pan out of the oven, scrape the creamed corn, sour cream and egg mixture out of the pan, stir in the Jiffy Mix, pour it back into the pan and shove it into the oven.
I’m not telling anyone and I hope you can keep a secret.
I’m vacuuming the house in preparation of visitors coming tomorrow. Working my way across the living room I stop to roll the big long red and blue tunnel to the other side of a carpet runner so I can vacuum up the rolling dog fur hiding underneath. It occurs to me that maybe most people don’t have an agility tunnel permanently affixed in their living room.
I kind of feel sorry for those that don’t.
Penny the sheltie-girl is whining to go out. We figure she has to poo so I hook her up to her leash and my sister and I head out to take her for a walk up the street. She puts her foot down at the end of the driveway and refuses to go further. Apparently she only walks up the road if we’re practicing her heeling, including appropriate treats. I have two dusty pieces of kibble in my pocket and that gets us almost to the next driveway but she’s not going further without rewards. My sister picks her up and we carry her past another driveway to the lawn where she likes to do her business. We begin to laugh, because who carries their dog to a neighbor’s lawn in order to get her to poo? We laugh so hard our stomachs hurt, then my sister puts Penny down and she proceeds to do her stuff, which we promptly bag.

And then we all walk happily home.

I was very relieved that I realized it before I cooked the creamed corn and egg stuff completely! It turned out just fine, you wouldn’t even know!

I’ll let you in on a little secret. I made carrot cake… and the grated carrots remained in a bowl on the counter… I did exactly as you did, only I just dumped them into the cake tin and mixed and returned the lot to the oven. Walks away whistling….

don’t feel bad about the cornbread, I accidentally set my oven on fire last weekend…….I store plastic containers in it (don’t ask) and THOUGHT I had taken them all out when I was going to heat up lasagna. Well…….the oven caught on fire…….thankfully I knew NOT to open the oven door. Had to call the Farmington Hills Fire Dept….they were super fast…..why? Because they said someone in our same complex around the corner from us was making hot dogs and started a fire…….I hated that oven anyway and a new one is coming this Wednesday lol. About Penny, Levi does a similar thing…..he will head outside and BOOM…..he stops (if the grass is wet)…..my husband used to pick him up when he was smaller…….no more!! Shelties are sooooooooo quirky!!! Penny’s expression in that last photo is beyond adorable!

I love Miss Penny’s head tilt — she’s got that down pat! Yes, your secret is safe with me. How many of us have done something similar, trying to multi-task? I got a kick out of you two “taxiing” Penny back home. Dallas used to love it when I’d carry him over rain puddles so he didn’t have to jump in his old age!

It seems Penny has definite ideas about where she’s going to go and what she’s going to do, and she’s hoping you’ll catch on soon. She thinks you’re a slow learner. As to your cornbread – yeah, I did something similar with a pumpkin pie once, leaving out an apparently important ingredient which is still a mystery to me. The pie was – sad. To say the least. At least you had a quick recovery.

I have not heard of putting sour cream in it. I do add the corn sometimes and peppers for Jack on his part.

It’s one box of Jiffy Mix, 1 Cup sour cream, one can of creamed corn, 2 eggs, beaten, 1 stick butter melted. Mix it all up, put it in a creased 8×8 pan. Bake for 40 minutes at 350. Take out of oven, sprinkle with shredded cheddar cheese, and bake for 5 more minutes.
